You will need some shredded green papaya (3lbs), a piece of carrot (thinly sliced), one red bell pepper, raisins (3/4 cup), one head of garlic, and ginger (4 thumbs).
For the juice, syrup, or brine of the atsara, you will need some vinegar (2 cups), white sugar (1 1/3 cups), salt (1tsp), and ground black pepper (1/2 tsp).
Before you start putting together your atsara, it’s critical that you soak the papaya in water and salt for two days to remove its resins.
