Get To Know Pau

When did you start Columbia St. Coffee?

“I started selling my coffee just this June of 2020. I had just quit my banking job due to the pandemic and thought I should at least do something productive. I’ve always wanted to sell coffee so might as well give it a try.”

How did you come up with the name?

“Basically, Columbia Street is the street I live on. Also, it’s a nice play of a particular type of coffee bean even though I use a variety of beans.”

What makes you very passionate about coffee?

“Multiple factors. Firstly, there’s the health aspect. Coffee has been my pre-workout drink of choice. I used down absurd energy drinks regardless of any negative impact it can do on my health. Then, of course, coffee is known to be a good source of antioxidants.”

He adds:

“But what really got me passionate about coffee is that it is not just a simple drink. You have different brewing methods to experiment with such as pour-over or french press just to name a few. Then there is the variety of beans to choose from. Our local beans are tremendous. There are also beans from around the world that I want to try out. Recently, I’ve been roasting my own beans which is another thing that tickles my curiosity. There are so many factors that you can brew a unique cup every time.”

Describe your coffee?

“Personal. I think that’s the best way for me to describe my coffee. I am still learning how to make my cup better. I like to think that every time someone orders from me they are having a taste of my coffee journey.”

Where do you get your beans?

“As of the moment, I buy from different local sellers who source their beans from local farmers. I still buy international beans from time to time in order to give other sources a try.”

How does Columbia St. Coffee stand out among the rest?

““Honestly, it’s unique. Just like any other barista, coffee seller, or cafe owner, I have my own taste in coffee. It’s not better nor is it worse than others. The coffee that I put out is a cup that I personally like. Hopefully, others would like it too.”

How do you see Columbia St. Coffee in the next 5 years?

“It would be a dream come true to be able to put up my own cafe.”

What’s the perfect blend for you?

“Double shot of espresso and steamed milk.”
