The term, Lumpia Shanghai pretty much reflects its Chinese influence and its roots.
The Chinese have been making various types of spring rolls for centuries.

So, when they came over, they pretty much shared their culinary traditions with us.
They introduced different versions of spring rolls, which eventually evolved into what is now known as lumpia in our local cuisine.
The specific name “Shanghai” is added to distinguish this particular type of lumpia from other types.
